Carrot Apple Walnut Almond Raisin Muffin

Dry mixture -flour, baking powder, baking soda, cinnamon, nutmeg

grated apples








grated carrots.


This recipe is simple.
280g flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
3 large eggs
180g castor sugar
150ml canola oil or light olive oil
1 tsp vanila essence
2 cups of carrots/ apples
100g toasted walnuts/almonds
75g raisins

1- dry mixture - sift flour, baking powder, baking soda, salt, cinnamon, nutmeg
2- stir in walnuts, almonds, raisins into dry misture and make sure they are coated with flour
3- pre heat oven 150 C
4- Whisk eggs & sugar
5- Add canola oil and vanila essence
6- Mix in carrots/ apples
7- Add wet misture into dry mixture until well incorporated
8- Fill each muffin cup about 3/4 full
9- Bake for 20-25 min or until muffinf are golden brown

Blueberry Cheescake





This recipe is from the baking classes organised by Grace Community Church in KL. The teacher is Kim. After watching her bake in the class, I tried it at home. This is the first time I baked Blueberry Cheesecake. It was lovely & yummy!

Baked Salmon with Horseradish and pickle sauce
































This is the process of baking salmon. The first photo is the horseradish sauce I bought. The second photo is grated potatoes to be mixed with horseradish sauce (add little pepper) to put on top of the salmon before baking. The yellow onions are very very nice and sweet (but realised it was so expensive when i was at the pay counter!!!) The raw salmon of course!

Marinate the salmon with pepper for few minutes. Salmon is salty by itself, so don't add any salt!After the horseradish is put on top, put the salmon on a caserole and baked it - sprinkle a little olive oil. put the rest of the vege (sprinkle olive oil) on the side of the caserole and baked all of it together - about 150 C for 45 minutes. Easy recipe!
Pickle sauce (optional):
Gerkins pickles, mayo sauce, mustard sauce, dill (chop finely), chives (chop finely), spring onion (chop finely), lemon juice, salt & pepper. Mix all in & ready to serve next to baked salmon.

Baked Salmon with Horseradish








This is the recipe I got from watching Michael Smith Chef at home - I wrote down as I watch the show! This is Baked Salmon with horseradish sauce on top, with roasted carrots, potatoes and onions, the optional pickle sauce at the side (photo above). Its really good, I must say! You can leave the pickle sauce out - the salmon taste so good by itself! The top photo is the pickle sauce I made to eat with the salmon.

Strawberry Cheese Tartlet





This is done in my baking class by a few people. 1 person made the pastry, i did the cheese mixture, someone pour it the strawberry and there it is! It was a fun baking workshop!

Marble Cheesecake 2



This is my second attempt on marble cheesecake. I must say this photo does not look as good as the first one. I learned something! The chocolate topping was harden pretty fast & sink a bit- didnt look as good when it was done! this second time look better & taste better! I need to improve more on the marble effect!!

Marble Cheesecake



This is my very first attempt on baking a cheesecake on my own! Only based on recipes that someone passed to me and no help from anyone! Very brave indeed! I though "What can go wrong?" Made of philadephia cheese and topped with the chocolate mix on top. Made a whirl like a pro! Turn out pretty good for a first timer!
